Kolaci

Making "kolaci" is a Czech tradition during all seasons but especially during Christmas and Easter. Kolaci is a pastry-like-dough that is filled with tvaroh(a ricotta-like smooth cheese without any flavor… kind of like cream cheese but with no flavor and not as creamy). This cheese-like filling is filled within the pastry and mixed with also on top with fruit pieces of any kind- my favorite though is poppy seeds! I was taught how to make these from my host sister while on my exchange in Czech Republic—the recipe is a family secret and had special ingredients like cinnamon and pepper inside the dough to give it an interesting taste. Kolaci symbolizes travelling and my home country (since I am about 75% Czechoslovakian) to me and whenever I make them it always brings back wonderful memories from Czech Republic and my host sister and host families!
